Is HACCP Training Mandatory in France?

Yes.

Since October 1, 2012, French regulation requires at least one trained person per food establishment.

This obligation applies to:

  • Restaurants

  • Snack bars and fast-food outlets

  • Catering businesses

  • Food trucks

  • Bakeries offering prepared food

  • Bed & Breakfast offering meals

The training must comply with European Regulation (EC) No. 852/2004 on food hygiene.

At the end of the course, you receive your official food hygiene certificate, valid throughout France.

How do you obtain your Food Hygiene Certificate?

To successfully complete the course:

  • Full attendance during the two training days is required

  • You must actively participate in practical exercises

  • You must pass a final multiple-choice test

Your official HACCP certificate is issued at the end of the course.

Unlike the Permis d’Exploitation, the HACCP certificate does not expire.

When do I need to register to the course?

Registration is possible until the day before the course, subject to availability.

Yes. The training is delivered entirely in English and adapted for international restaurant owners operating in France.

What is the difference between HACCP training and Permis d’Exploitation?

HACCP training concerns food safety and hygiene.
If you plan to serve alcohol, you will also need the Permis d’Exploitation training (20 hours), delivered in English via videoconference.

Do I need HACCP training before opening a restaurant in France?
